  • 1 cup (180g) wild rice
  • 1 yellow onion - diced
  • 1/2 cup (80ml) water
  • 6 garlic cloves - minced
  • 1 tsp dry thyme
  • 1 can (400ml) lite coconut milk
  • 1 tbsp white/yellow miso paste
  • 1/4 cup (60ml) tomato sauce
  • 3 tbsp tomato paste
  • 2 cans cannellini beans - drained & rinsed
  • 1 tsp ground cumin
  • 1 tsp salt
  • black pepper - to taste
  • 6-8 cups (400g-540g) kale - stems removed

ingredients

  • non-stick pan to medium heat
  • add diced onion & salt - 1 minute
  • add water & bring to simmer - 5 minutes (onion softened and water mostly gone)
  • add garlic & thyme - stir frequently for 2-3 minutes
  • add coconut milk, miso, tomato sauce, tomato paste, cannellini beans, cumin, pepper, salt & kale
  • bring to a simmer - 10 minutes
