Creamy White Beans with Kale & Wild Rice

Ingredients
- 1 cup (180g) wild rice
- 1 yellow onion - diced
- 1/2 cup (80ml) water
- 6 garlic cloves - minced
- 1 tsp dry thyme
- 1 can (400ml) lite coconut milk
- 1 tbsp white/yellow miso paste
- 1/4 cup (60ml) tomato sauce
- 3 tbsp tomato paste
- 2 cans cannellini beans - drained & rinsed
- 1 tsp ground cumin
- 1 tsp salt
- black pepper - to taste
- 6-8 cups (400g-540g) kale - stems removed
Recipe
- non-stick pan to medium heat
- add diced onion & salt - 1 minute
- add water & bring to simmer - 5 minutes (onion softened and water mostly gone)
- add garlic & thyme - stir frequently for 2-3 minutes
- add coconut milk, miso, tomato sauce, tomato paste, cannellini beans, cumin, pepper, salt & kale
- bring to a simmer - 10 minutes
