Lentil & Chickpea Potato Goodness

Ingredients

Topping

  • 650g-700g potatoes
  • 100g vegan cheese - finely grated
  • 100ml-200ml milk
  • 1/2 tsp salt
  • 1/2 tsp pepper

Filling

  • 300ml (180g) veg stock
  • 1 tin (400g) chickpeas
  • 1 tin (400g) lentils
  • 2 red onions - broadly chopped
  • 1 large carrot - grated
  • 4-5 garlic cloves - minced
  • 3 tbsp tomato puree
  • 2 tbsp soy sauce
  • 2 tsp dry rosemary
  • 2 tsp dry thyme
  • 150g peas
  • 3 tbsp corn flour

Recipe

ingredients

  • boil potatoes until ready for mash
  • large frying pan to medium-high heat
  • sautee onion, carrot & garlic - 3 minutes (slightly softened)
  • add tomato puree, soy sauce, rosemary & thyme - fry for 1 minute
  • pre-heat oven to 220 degrees
  • add peas, lentils, chickpeas, stock & corn flour to pan - stir until sauce has thickened and there are no more pools of liquid on the bottom of the pan
  • transfer potatoes to bowl
  • add cheese, milk, salt & pepper - mash together
  • transfer filling to baking dish
  • spoon mash evenly over filling
  • place in oven - 20 minutes
  • place under high heat grill - couple of minutes (to brown)
